HOW TO MAKE buffalo chicken baked potatoes recipe
- First begin by baking the potatoes. To make sure the skins stay perfectly intact, bake in a 400ºF oven for 50-70 minutes. If you are in a hurry, consider making instant pot baked potatoes or cook them in the microwave.
- Once the potatoes have baked, cool slightly, slice off the top part of the potato, enough to scrape out almost the entire potato. Use a spoon to scrape out the insides, leaving some of the flesh still on the skins. Transfer the potato filling to a large bowl.
- To the potatoes add half the ranch dressing mix, butter, half the cream cheese, cheese, milk, garlic powder, and salt. Use a hand mixer to beat on medium speed just till combined.
- Transfer the potato skins to a foil-lined baking sheet and divide up the ranch potato filling. Return to the oven and bake for 15 minutes, or until hot throughout.
- Meanwhile, make the buffalo chicken topping. First mix together the remaining cream cheese, ranch, and hot sauce. Stir in the cooked chicken and celery.
