Unfortunately, disappointing results commonly occur when baking gluten free recipes, whether you are new to gluten free baking or experienced. Since most gluten free bread recipes use a lot of very expensive gluten free flour, it’s important to not let your money and time go to waste!
Below are the most common pitfalls when baking quick or yeast breads and how to transform common problems into the best gluten free bread!
- Quality gluten free flour – Use a great tasting flour since the bulk of the recipe is made up of flour. I’ve tested the most common gluten free flours on the market to definitively find out which one is the best. - Gritty texture – Let the batter rest for 30 minutes before baking to give the starches time to relax and absorb liquids.
- Dense crumb – Adding a little extra leavener, such as baking powder, or ground psyllium husk helps.
- Gummy, wet crumb – Since gluten free flours don’t absorb moisture as well, try lowering the oven temperature and baking longer to give time for it to evaporate.
- Crumbly texture – Add an extra egg or yolk as a binder. Also make sure your flour blend contains xanthan gum or add a pinch extra.

- I highly recommend using an instant read thermometer to check the temperature. The bread will “look” done before it’s actually adequately baked. If you pull the bread too soon it will be gummy, instead of soft and fluffy.
It should reach a temperature of 205-210ºF. Checking quickly with an instant read thermometer will help the bread retain valuable heat while the temp is being read. A Thermoworks Thermapen does this efficiently and accurately.
Let batter rest to avoid a gritty texture. Yeast breads naturally rest, but also let quick breads sit for 20-30 minutes before baking to give the starches time to relax and absorb liquids.
- Use instant rapid rise yeast, which has smaller granules to proof faster. This is especially important with gluten free bread since there is only one rise.
- Make sure your oven temperature is accurate. If the bread rises too quickly from a higher oven temp, it will sink upon cooling.
- Use a recipe designed for gluten free! Gluten free bread recipes follow a totally different set of rules since the lack of gluten makes it behave differently. If you try substituting gluten free flour in a “regular” recipe, you will have disappointing results!

Gluten free bread rises with leaveners, such as baking powder, baking soda, yeast, or sometimes a combination. Unlike traditional breads, GF yeast breads use instant rise yeast, and for best results, in combination with baking powder. Gluten free flour are heavier so this helps them rise higher.
For best results, also use room temperature ingredients and bloom the yeast in warm water with a bit of sugar added.
Can I make gluten free bread in a bread machine?
Yes, but the order of the ingredients will differ from the oven recipe. First whisk together the liquids in the bread machine, then add dry ingredients. The very last ingredient to go in the bread machine should be the yeast.
Since gluten free breads only require one rise, you will need a bread machine with a gluten free setting. Although expensive, Zojirushi brand comes highly rated with great results. Hamilton Beach makes a more affordable option and has a gluten free setting as well.
What is the best way to store gluten free bread?
Gluten free bread does not have the shelf life like normal bread. Refrigerating will dry it out, and is not recommended. It may be wrapped tightly and left at room temperature, but will lose optimal taste and texture quickly.
For best results, slice and freeze the bread after it has completely cooled (at least 3 hours). Pull slices as needed from the freezer to defrost or toast from frozen.
If making biscuits, muffins, rolls, or flatbreads cool completely and store well wrapped leftovers in the freezer as well.
