Ginger flavors everything from ginger ale, asian-inspired cooking, spiced breads and cookies, to tea and sushi. Ginger’s warm, woodsy taste cleanses palates, but also brings a citrus bite to dishes and drinks.

Candied ginger wards off nausea and motion sickness, boosts immunity, and has anti-inflammatory properties. So will ginger syrup do the same?

Yes, since this easy recipe for ginger simple syrup is infused with fresh ginger, it will have similar digestive benefits when mixed into tea or warm milk. But you’ll mostly find me using flavored simple syrup in my favorite cocktail recipes!

It can be mixed with your preferred spirit or gluten-free alcohol of choice, from vodka, rum, tequila, and more. It’s particularly delicious in these pear ginger cocktails, which have been requested many times over when we entertain.

How to Make Ginger Simple Syrup Recipe

  1. Combine ginger, sugar, and water in small saucepan. Bring to a boil and stir until sugar dissolves. Remove from heat and cool for 30 minutes.
  2. Set a mesh strainer over a bowl. Pour ginger syrup through, discarding ginger. Transfer ginger syrup to an airtight container and store in refrigerator until ready to use. It’s as simple as that!

  1. Replace half of the water with freshly squeezed lemon juice for a lemon ginger syrup.
  2. Instead of sugar, replace with an equal amount of honey, pure maple syrup, or demerara sugar.
  3. Add fresh mint leaves or other aromatics, such as rosemary.
  4. Make spiced syrup by adding 2 cinnamon sticks, whole cloves, and all spice berries to the mixture, then strain out.
  5. For a spicy ginger flavor, instead of straining out the ginger, blend it all together until smooth.

How Long Does It Last?

Luckily a long time since the sugar acts as a preservative. Simple syrup will stay good up to two months if refrigerated in an airtight container.

Typically I use swing top glass bottles, but lidded glass jars may also be used. If the syrup begins to look cloudy or has a foul order it has gone bad.

Can I make Simple syrup with ground ginger?

No. Ground ginger is best used to flavor baked goods. Powdered ginger root will not be potent enough to flavor a simple syrup so it’s recommended to stick with fresh.
