Ingredients

½ cup fresh ginger peeled and chopped
1 cup water
1 cup sugar

Instructions

Combine ginger, sugar, and water in small saucepan. Bring to a boil and stir until sugar is dissolved. Remove from heat and cool for 30 minutes.
½ cup fresh ginger, 1 cup water, 1 cup sugar
Set a mesh strainer over a bowl. Pour ginger syrup through, discarding ginger. Transfer ginger syrup to an airtight container and store in refrigerator until ready to use.

Notes

Storage

Ginger syrup will stay good up to two months if refrigerated in an airtight container.

Typically I use swing top glass bottles, but lidded ball jars may also be used. If the syrup begins to look cloudy or has a foul order it has gone bad.

Uses

Mixing in cocktails
Homemade ginger ale - Add to soda water with squeeze of lemon
Sweeten hot or cold tea
Flavor oatmeal, yogurt, or cottage cheese
Pour on waffles or pancakes
Drizzle on ice cream with candied ginger and granola
Use in salad dressings or marinades
Toss with fresh fruit salad
Flavor roasted carrots, squash, sweet potatoes, or brussels sprouts (similarly to how maple syrup is used)
Stir in lemonade
Drizzle on warm pound cake or scones
