If you loved Shake and Bake, now can enjoy the same ease and taste, but with a gluten-free breaded boneless pork chops recipe! Oven fried pork chops are coated with a crispy breading the whole family will devour, but no one has to know they are allergen-friendly.

And isn’t that always the struggle with gluten-free dinner ideas? Word.

These baked gluten-free pork chops are a spin-off of another popular recipe, crispy almond flour breaded chicken. Similar to that family-fave, the breading is equal parts almond flour and parmesan. This creates a golden coating, slightly nutty taste, and best of all…no one knows it’s GF. 👊

Plus, baked gluten-free pork chops means an effortless, virtually hands-off recipe (another goal I perpetually strive for). The hardest part will be determining when the pork is done. For a sure-fire method I grab my kitchen tool work horse, an instant read thermometer, but you can also poke a hole with a knife and the juices should be clear or faintly pink.

If you really want to earn the marks of best-meal-of-the-week award, serve up breaded pork chops with drizzle of 5-minute no drippings needed gluten-free gravy, and a side of creamy mash, of course. Just be prepared for dinner to commence with a round of applause.

Ingredient Tid Bits

  • Almond Flour – Unblanched almond flour or almond meal may be used. Makes no difference here, like it does with baking. Alternatively, to keep the recipe gluten-free alternative, swap out an equal amount of crushed gluten-free cereal, crackers, or gluten-free breadcrumbs.
  • Parmesan Cheese – I use store-bought grated parmesan to keep the prep simple, but you may also grate fresh. For a dairy-free alternative, use nutritional yeast.
  • Pork Chops – My preference is center cut boneless, which I also use in another quick gluten-free pork dinner – pan-fried rosemary pork chops. You can also slice pork tenderloin or use bone-in chops, but baking times would differ.

Prep Your breading station

Sorry, this baked gluten-free pork chops recipe doesn’t come with its own sous chef, so you’ll have to prep your own station. In one bowl, big enough to fit the boneless pork, beat an egg. In another shallow bowl mix together the almond flour, parmesan cheese, parsley, garlic powder, seasoned salt, and pepper. Easy peasy.

Bonus secret, dip, and bake

Every time I make oven fried recipes, I use this little trick to get a nice sear on the meat. Grease a baking sheet with olive oil and place it in the oven for at least 10 minutes to get hot. After you dip the pork chops in the egg, then breading, transfer it to the steamy hot pan. Bake for 15 minutes, rest for 5, then enjoy!

Love a make-ahead freezer meal?

If you are looking for a freezer-friendly, meal prep recipe, these boneless pork chops are perfect! Bread the pork, wrap individually in plastic wrap, and then transfer to ziplock freezer bag. Freeze up to 3 months.

To bake, thaw completely in the refrigerator. Unwrap the pork and cook as directed. You can also bake from frozen, but they will take about 10 minutes longer.

Other cooking methods

If you’re not feeling like it’s an oven night, no sweat, there are other ways to enjoy GF breaded pork chops! You will still bread boneless chops as the recipe states, but cook to juicy perfection in an air fryer or on the stove top.

If using a stove top method, be sure the pan is big enough to fit 4 chops with room to flip. Once the well greased pan is hot over medium heat, cook on on side 3-4 minutes, flip, and fry until cooked through.

To air fry, preheat the oven to 400ºF. After breading the pork, spray each side with cooking spray or an olive oil mister. Cook for 5 minutes, flip, and cook for 5-6 minutes more, or until cooked through.

Secret to extra crispy baked breading

Full disclosure, when it comes to weeknight dinner I get L-A-Z-Y, so I often skip anything that requires extra washing, but if you are feeling extra energetic, there’s a way to get crispy breading on both sides! 😯

Line a baking sheet with foil and fit a wire rack inside. Spray the rack with cooking spray and place the breaded pork chops on top. The baking time stays the same, but both sides will get equally crispy.

Almond Flour-Breaded Baked Pork Chops (Gluten-Free)

  • Preheat the oven to 425°F. For best results, drizzle olive oil in a large cast iron skillet and place in the oven while it's preheating. Alternatively, grease a baking sheet with olive oil and place it in the oven for at least 10 minutes to get hot. This creates a nice sear on the pork.
    1 tablespoon olive oil
  • Season the pork chops with salt and pepper. In a small shallow bowl, whisk the egg. In another shallow bowl mix together the almond flour, parmesan cheese, parsley, garlic powder, seasoned salt, and pepper.
    1 large egg, ⅓ cup almond flour, ⅓ cup grated Parmesan, 1 tablespoon dried parsley, ½ teaspoon garlic powder, ½ teaspoon seasoned salt, ⅛ teaspoon ground black pepper
  • Dip a pork chop in the egg and then coat both sides with the almond flour / parmesan breading. Transfer it to the hot cast iron skillet or baking sheet. Repeat with remaining pork chops.
    4 boneless pork chops
  • Bake the pork for 15-17 minutes, flipping halfway through. The pork is done when the internal temperature reaches 145°F. Let it rest for 5 minutes before serving with optional lemon wedges.

Almond Flour Substitute
Instead of almond flour, almond meal may be used. Other gluten-free alternatives include crushed gluten-free cereal, crackers, or gluten-free breadcrumbs. If you do not need a gluten-free pork recipe, use panko or traditional breadcrumbs.
