5-Minute Microwave Rice Pudding For Two
Ingredients
- ¾ cup milk
- 3 tablespoons granulated sugar
- 1 egg yolk
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 1 ¼ cups cooked rice, any kind
- 1 tablespoon butter
Instructions
- In a large microwave safe bowl (the mixture will boil and expand during cooking so make sure there is room), whisk together the milk, sugar, egg, vanilla extract, and cinnamon. Add the cooked rice and stir to combined.¾ cup milk, 3 tablespoons granulated sugar, 1 egg yolk, ½ teaspoon vanilla extract, ½ teaspoon ground cinnamon
- Microwave on full power for 3-5 minutes, stirring every minute, until thickened. After it cooks, add the butter to melt and stir in. It will thicken more as it cools, but you may add additional milk to thin further, if desired.1 ¼ cups cooked rice, 1 tablespoon butter
- Serve with whipped cream, additional cinnamon, raisins, or coconut. Store leftovers in the fridge and slightly rewarm when ready to enjoy again.
