If you read my Mama’s Minutes update on last Week’s Meal Plan, you know during our visit to Colorado Ryan and I contemplated how wonderful it would be to raise our family in such a beautiful place.
But, there’s reality and family ties, so we won’t be uprooting the fam to ride off into the sunset. However, we did come up with a SOLID PLAN B.
Buy a camper.
So that’s what’s on the docket today. Ryan and I will be picking up our first family camper. Holla.
We’ve discussed buying a camper for years, but I continually nixed the idea. Instead of focusing on family bonding and memory making, my mind drifted to screaming babies keeping a very close-quartered family awake and being a nervous wreck with unsteady toddlers wobbling around a campfire.
Not to mention, caring for a young family is challenging and exhausting enough, let alone enduring it while roughing it. 🙅♀️
Now it’s go time, though. No more diapers, the kids are more or less steady on their feet, and if they wake up in the middle of the night I can threaten withholding donuts for breakfast.

Monday: Baked Buffalo Chicken (Hands On: 20 minutes, Bake: 18 minutes), steamed rice, frozen corn
Tuesday: (Slow Cooker) Stuffed Pepper Soup (Hands On: 15 minutes Slow Cooker: 6-8 hours) – I won’t add rice to the soup so I can freeze half for another meal. Add the cooked rice to bowls as you serve it. English Muffin Bread (hubby & kids), leftover frozen Gluten free Biscuits (me)
Wednesday: Philly Steak Sloppy Joes served on baked potatoes (Hands On: 20 minutes, Bake time for potatoes: 45 minutes), salad, fruit
Thursday: Tuna Noodle Casserole (Hands On: 20 minutes, Bake: 30 minutes), applesauce, green beans
Friday: Nacho night with boiled, shredded chicken mixed with salsa, black beans, cheese, avocado, lettuce, tomatoes, and cilantro
Weekend Baking: I’m kind of jumping the gun here, but I need to update some old recipes for Spider Cookies and Butterscotch Apple Cheesecake Bars. Plus I have a half bushel of freshly picked apples to contend with!
