Everyone needs a go-to meatloaf recipe for weeknight dinners. There are plenty of versions to choose from, such as pork meatloaf and Italian meatloaf, but sometimes the soul calls for a good, old-fashioned, traditional meatloaf with that classic ketchup glaze.
This falls right in line with my go-to easy dinner ideas, especially when I need something yummy on the table quick. While classic oven meatloaf takes over an hour to bake, meatloaf in the instant pot cooks in only 25 minutes!
Most importantly, the ingredients are simple. Except for the ground beef and potatoes, I generally have everything on hand. With only two ingredients to buy, it’s economical to make.

Instant Pot Meatloaf and Mashed Potatoes
The other winning aspect of this recipe is it makes the side dish right along with it! The most creamy, fluffy mashed potatoes cook with the meatloaf in the pressure cooker.
Once the timer beeps, release the pressure and add the remaining mashed potato ingredients to the pot. Simply mash and serve!
Absolutely genius because who can enjoy meatloaf without mashed potatoes?!
How to Cook Mashed Potatoes in Instant Pot
- Pour in 1 1/2 cups water and add 3 pounds of potatoes cut into large quarters. I used a combination of quarted gold potatoes with skins on and peeled russet potatoes.
- Place steam rack trivet on top with handles up.
- Top trivet with shaped meatloaf in the aluminum foil. Secure lid and cook at HIGH pressure for 25 minutes.
- While meatloaf is cooking set out cream cheese and butter to soften.
- Quick release pressure and carefully remove meatloaf with foil and trivet.
- Add butter, cream cheese, warmed milk, onion powder, salt, and pepper to the cooked potatoes. Use to a potato masher to smash and blend. For cheesy mashed potatoes, stir in 1/2 cup freshly grated parmesan cheese.
How to Make Meatloaf in the pressure cooker
- In a large bowl combine ground beef, eggs, oats, ketchup, onion, worcestershire, salt, and pepper. Mix well.
- Use a small bowl to mix together ketchup, brown sugar, and apple cider vinegar for the meatloaf glaze.
- Place trivet on top of pot of cut potatoes. Criss cross two large pieces of aluminum foil and press along bottom and sides of Instant Pot.
- Place shaped meatloaf on foil-lined rack. Roll down the sides of foil to be able to lift it out easily. Brush on half the glaze.
- Secure lid and cook at HIGH pressure for 25 minutes. Release pressure and preheat broiler.
- Carefully transfer meatloaf to a small baking pan. Use a knife to puncture a small hole towards the bottom of the foil and let excess grease drain out.
- Brush on remaining glaze and broil for 1-2 minutes. Let rest for 15 minutes before slicing.
How long to cook meatloaf in the Instant Pot?
Two pounds of meatloaf in the pressure cooker should cook for 25 minutes using high pressure. Once the timer beeps, use quick pressure release.
It’s always good practice to check the internal temperature of meat before serving. Meatloaf should reach an internal temperature of 160ºF.
If the meatloaf is not to temperature yet secure on lid and close seal. Bring back up to pressure and cook for 5-10 minutes more. Alternatively, finish cooking meatloaf in a 350ºF on a small baking sheet.

Slow Cooker method
This classic meatloaf recipe may also be cooked in the crockpot following these instructions.
- Line the bottom of the crock pot with a long piece of aluminum foil. Roll 2 ends so the meatloaf can be lifted out after it is done cooking.
- Place shaped meatloaf on top of foil. Spread 1/2 meatloaf glaze over the meatloaf.
- Cook on LOW for 6 hours or HIGH for 3 hours. Check to make sure temperature has reached 160ºF once cooking time ends.
- Carefully lift out meatloaf with foil and transfer to a small baking sheet. Spread on remaining glaze. Place under broiler for 1-2 minutes, or until glaze bubbles.
- Let meatloaf rest for 15 minutes before slicing.

Yes! If you prefer traditional meatloaf in the oven follow these baking instructions.

Preheat oven to 350ºF. Place a wire rack inside a large baking sheet. Cover wire rack with a piece of aluminum foil. Set aside. Alternatively, use a loaf pan to place meatloaf in.

In a small bowl mix together glaze ingredients and set aside.

In a large bowl mix all of the meatloaf ingredients until well combined. Place mixed meatloaf on a prepared baking sheet and shape into a 9X5 inch loaf. Alternatively, place meatloaf in loaf pan.

Spread half of the glaze all over the top and sides of meatloaf. Set remaining glaze aside.

Bake for 30 minutes. Spreading remaining glaze over the top and sides of meatloaf. Bake for 35 – 45 minutes longer, or until thermometer registers 160ºF. Let meatloaf rest 15 minutes before slicing and serving.
Make-Ahead Directions
The best feeling is having a meal ready to go during those busy weeknights.
To make the Instant Pot Meatloaf ahead of time, mix together the meatloaf ingredients and shape into a loaf. Securely cover with plastic wrap and store in the refrigerator or freezer.
If frozen, add 20 additional minutes to the cooking time with a 10 minute natural release.
The meatloaf may also be thawed or partially thawed in the fridge before cooking. For partially frozen meatloaf, add 10-15 minutes to the cooking time, depending on how frozen it is.
While frozen meatloaf still tastes good, it may not bind together as well as fresh meatloaf does. Also, be sure to check the final internal temperature when cooking from frozen.
The meatloaf should reach a temperature of 160ºF. If temperature isn’t reached, secure lid back on and seal value. Cook for an additional 5-10 minutes, checking temperature again.

Pressure Cooker Meatloaf and Mashed Potatoes
Ingredients
Mashed Potatoes
- 1 ½ cups water
- 3 pounds gold potatoes, washed and quartered (peeled or unpeeled)
- 4 ounces cream cheese, softened
- 4 tablespoons butter
- ¼ cup milk, warmed
- 1 teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon pepper
Glaze
- ¾ cup ketchup
- 2 tablespoons brown sugar
- 2 teaspoons apple cider vinegar
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
Meatloaf
- 2 pounds lean ground beef
- 2 eggs, lightly beaten
- ½ cup quick cooking oats
- ⅓ cup ketchup
- ⅓ cup onion, finely chopped
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- First pour in 1 1/2 cups water in the pressure cooker and top with potatoes. Adding the water first prevents a BURN warning. Place steam rack trivet on top with handles up.
- Criss cross two long pieces of aluminum foil and press along trivet bottom and up sides.
- In a large bowl mix together all meatloaf ingredients and shape into a round loaf. Mix together glaze ingredients and set aside.
- Place shaped meatloaf on foil-lined rack. Roll down sides of the foil to be able to lift it out easily. Brush on half the glaze.
- Secure lid and cook at HIGH pressure for 25 minutes. Quick release pressure and preheat broiler.
- Carefully transfer meatloaf with foil to a small baking pan. Use a knife to puncture a small hole towards the bottom of the foil and let excess grease drain out. Drain the potatoes and add back to the pot.
- Brush the remaining glaze onto the meatloaf and broil for 1-2 minutes, or until glaze bubbles. Let rest for 10-15 minutes before slicing while potatoes are finished.
