Best way to cut ice cream cake

Dairy Queen, Cold Stone, or even a homemade ice cream cake makes perfect addition to any birthday party. What’s not to love about soft cake, creamy ice cream, hot fudge, and whipped cream all layered in one creation!

step one – Thaw the cake

A lot of frustration comes from trying to cut an ice cream cake directly pulled from the freezer. For best results, let it sit at room temperature for 15-20 minutes first, or move the cake from the freezer to the fridge for 30-40 minutes before slicing.

EXPERT TIP: I find letting it soften in the refrigerator better than setting at room temperature. It will thaw evenly throughout instead of a softer outside with a solidly frozen middle.

step Two – Choose the right knife

I use my heaviest, biggest knife which is a chef’s knife. A large serrated knife will also work well. If using a serrated knife, use a back and forth sawing motion. For a chef’s knife, press straight down through the cake.

step Three – warm the knife and slice

You have two options here. The first one is to get a tall glass of hot water and towel to where you will be cutting and slicing your cake.

Dip the knife in the hot water, carefully wipe it dry, then slice. Re-dip and wipe between slices.

EXPERT TIP: The other option – bringing the cake next to a sink – is what I recommend. Run hot water and let it run over the blade. Carefully wipe it dry and slice. Repeat as the knife cools down, or between slices.

Will ice cream cake melt in the fridge?

Yes, an ice cream cake will melt in the refrigerator and should not be stored there for a long period of time. They should be stored in the freezer.

However, frozen cakes may be softened before cutting in the fridge. I find this method better than setting at room temperature because it thaws evenly instead of a softer outside with a solidly frozen middle.
