Take advantage or those juicy vine ripened tomatoes when they come into season! Broiling or baking tomato slices with cheese gives the concentrated flavor of slow oven roasted tomatoes, but in minutes.
This recipe is ideal for an easy appetizer (serve with sliced baguette) or low carb, gluten-free side dish. Made without breadcrumbs, this 4 ingredient dish makes an effortless summer treat!
Ingredients Needed,
- Fresh tomatoes – Large tomato sliceable work best, but Romas may also be used.
- Olive Oil
- Salt and Pepper
- Cheese – Use any preferred cheese, such as parmesan, mozzarella, cheddar cheese, or gruyere
- Herbs – Sprinkle on fresh herbs, such as basil, chives, oregano, thyme or use dried herbs, such as Italian seasoning.
How To Make Baked Tomatoes recipe
- Grease a 13X9 baking pan or rimmed baking sheet and preheat broiler or oven. If broiling, adjust oven rack to top position.
- Lay sliced tomatoes on prepared pan. Drizzle with olive oil and season with salt and pepper.
- Place tomatoes under broiler for 8-10 minutes, rotating pan halfway though. The tomato edges will start to char and blister.
- Remove from oven and sprinkle on cheese. Return to oven about 1-2 minutes more, or until cheese is bubbly.
- Sprinkle with fresh herbs and serve immediately.
choose Broiled or Baked
I prefer broiling the tomatoes because I love a little charred flavor. However, the tomato slices may also be oven baked for equally great flavor.
To make baked parmesan tomatoes prepare them the same way, but add the cheese with the olive oil, salt, and pepper. Place them on a middle rack in a 400ºF oven. They will take a little longer to bake, about 10-12 minutes.
If you like the parmesan or mozzarella cheese to be a little golden, turn on the broiler for the last minute.
Types of Tomatoes to Use
Broiled or baked tomato slices recipe is best with big, juicy, ripe beefsteak tomatoes. Slice the tomatoes in 1/2 inch rounds, thick enough to not fall apart when serving and hold on to a thick layer of gooey cheese.
Any type of large, sliceable tomato will work, such as heirloom or beefsteak. Halved Roma tomatoes may also be oven roasted, but forgo smaller cherry or grape tomatoes for this particular recipe.

A perfectly ripe summer tomato bursts with juicy flavor on its own, but any of these additions pair perfectly with oven baked tomatoes.
- Cheese – Parmesan and Mozzarella are the most common toppings, but slices of sharp cheddar, swiss, or gruyere also adds magic!

- Mayo – Spread a thin layer of mayo instead of olive oil. Top with cheese and bread crumbs.
- Bread crumbs or panko – Use regular or gluten free bread crumbs to sprinkle on with the mozzarella or parmesan cheese.
- Garlic – Use freshly minced, garlic powder, or garlic salt
- Italian seasoning or other dried herbs, such as basil, oregano, or thyme
- No cheese – Broiled or Baked Tomatoes are also perfect without cheese. Drizzle with olive oil and season with salt and pepper for a simple side.

Since the tomatoes are roasted, this dish is even good when tomatoes are out of season. Baking them concentrates and sweetens their flavor. I would recommend globe tomatoes or tomatoes sold on the vine.
