Chewy Gluten-Free Funfetti Bars with Golden Oreos

These gluten free funfetti bars are the most fun thing you'll bake all year — chewy, buttery blondies loaded with sprinkles, white chocolate chips, and layered with gluten free Golden Oreos in every single bite. They're like a birthday party and cookie bar mash up, perfect for celebrations! Nobody is going to believe these are gluten free, and honestly, you don't have to tell them.

  • Preheat the oven to 350°F. For easier cutting, line an 8X8 baking pan (metal is best) with a foil sling by folding 2 sheets lengthwise and placing in the pan perpendicular to each other. Press into corners and up sides and then spray with non-stick cooking spray. Alternatively, liberally spray an 8X8 baking pan with non-stick cooking spray. Set aside.
  • In a large bowl whisk together the melted butter, brown sugar, and sugar. Add in the eggs, milk, and vanilla extract. Whisk until well combined.
    7 tablespoons melted butter, ½ cup packed light brown sugar, ½ cup granulated sugar, 2 large eggs, 2 tablespoons milk or non-dairy milk, 1 tablespoon vanilla extract
  • Stir in the gluten free flour, salt, and baking powder until no flour pockets remain. Stir in the white chocolate chips and sprinkles.

  • Pour half the batter into prepared pan and spread evenly. Lay 4-by-4 rows Oreo cookies on top of the batter. Dollop the rest of the batter over the top and spread evenly using an offset spatula. Take the remaining cookies and break in chunks. Sprinkle across the top of the brownie batter. For extra goodness (why not?!) sprinkle some additional chocolate chips on top as well, if desired.

  • Bake for 40-43 minutes, or until a toothpick inserted in the center comes out clean, without wet dough. It's best to try to get past the layers of Oreos to make sure it's cooked on the bottom.
  • For best results, let the bars cool for 1-2 hours in the pan before lifting out by the foil handles to cut into bars. Store cooled bars in an airtight container at room temperature for up to 2 days.
