Combine ginger, sugar, and water in small saucepan. Bring to a boil and stir until sugar is dissolved. Remove from heat and cool for 30 minutes.
½ cup fresh ginger, 1 cup water, 1 cup sugar
Set a mesh strainer over a bowl. Pour ginger syrup through, discarding ginger. Transfer ginger syrup to an airtight container and store in refrigerator until ready to use.

Ginger syrup will stay good up to two months if refrigerated in an airtight container.Typically I use swing top glass bottles, but lidded ball jars may also be used. If the syrup begins to look cloudy or has a foul order it has gone bad.
