Peanut Butter Sugar Brown Sugar Eggs Vanilla Extract Quick Cooking Oats Baking Soda

Mix the peanut butter and sugars together. Then mix in the eggs and vanilla. Finally add the quick oats and baking soda.

Let's Make It!

Roll out the dough into small balls. Flatten them with a fork and bake 8-10 minutes.

For the filling, beat together softened butter, peanut butter and powdered sugar until smooth.

Add filling to the baked cookies. Then top one cookie with another and gently press together.

How To Store Leftovers:

For optimal freshness, wrap each cookie individually in plastic and store at room temperature for up to a week. They can also be frozen up to 3 months.
