Ingredients

Onion Olive Oil Eggs Milk Refried Beans Cheddar Cheese Salsa Tortilla Chips

Whisk together eggs, milk, salt, and pepper and set aside.

Let's Make It!

Saute the onions until translucent. Add in the egg mixture and heat until the eggs are almost cooked through.

Remove the pan from heat and fold in the cheese and crushed chips.

Smooth out the top of the frittata and sprinkle the rest of the cheese on top. Place in the oven and bake through.

Spread the refried beans on top and sprinkle with more crushed chips and salsa. Then, cut into slices and serve!

How Should I Reheat Leftovers?

If you are reheating the this recipe, leave off any salsa, sour cream, avocado, or cilantro. Freezing and reheating with the beans and extra chips will be fine.
