Ingredients

Pinto Beans Chili Powder Cumin Green Chiles Lime Juice Sharp Cheddar Cheese Gluten-Free Tortillas

Microwave the beans and seasonings in a bowl to soften. Add in the lime juice and green chiles and mash. Stir in the cheese.

Let's Make It!

Lay out a tortilla and spread the filling out on half of it. Then fold over the unfilled side and press to seal.

Heat and oil a skillet. Spread out some cheese and place a prepared quesadilla on top.

Once the cheese is crisp, flip the quesadilla and cook for another minute. Repeat with remaining quesadillas, and serve!

Can I Use Corn Tortillas?

Yes! Since corn tortillas are smaller I recommend using two per quesadilla. Lay one tortilla on your work surface and spread with the bean mixture. Cover with another tortilla, then cook with whichever preferred method.
