Frittata muffins are an easy, healthy, low carb, and gluten-free breakfast. Even kids love these make-ahead snacks with a combination of sausage, cheese, peppers, and potatoes!

Ingredients Needed:

Breakfast Sausage Mushrooms Peppers Potatoes Green Onions Eggs Cheese

Brown the sausage and drain excess grease. In the same pan saute the veggies until tender.

Whisk the eggs, then stir in the veggies, green onions, and cheese. Pour into muffin tins and top with more cheese.

Bake for 16 minutes and enjoy immediately  or cool and freeze!

What is the best way to reheat?

If frozen, allow them to thaw first then heat in the microwave. Or reheat from frozen at 50% power.
