Let's Make It!

Add in the refried beans and water to the ground beef mixture and mix together.

Heat some oil in a small skillet and then heat a stack of 3 corn tortillas at a time. Wrap in foil to keep warm.

Sprinkle cheese in the middle of the tortilla, top with beef / bean mixture and roll. Place  seam side down in the prepped baking dish.

Pour the remaining enchilada sauce over the top and sprinkle with cheese. Bake for 30 minutes at 350ºF and enjoy!

Can I Make This Ahead of Time?

Yes! This can be assembled and refrigerated up to 24 hours before baking. For best results, let it sit out for 60-90 minutes before baking to come to room temperature. Otherwise, you will need to bake 10-15 minutes longer.
