Ingredients

Breakfast Sausage Fresh Mushrooms Bell Pepper Sweet Potato Green Onions Eggs Sharp Cheddar Cheese

In a large skillet, cook the sausage over medium heat until browned, then set aside.

Let's Make It!

Add the sweet potato, mushrooms and peppers to the skillet and cook until soft. Then set aside.

In a large bowl, whisk together the eggs. Then add in the vegetables, sausage and cheese and mix.

Evenly distribute the egg mixture into muffin tins and top with more cheese.

Bake in the oven until the eggs are set in the middle, then serve and enjoy!

Can I Freeze Levtovers?

Yes! Egg muffins may be frozen up to 2 months. For optimal storage, wrap individual egg cups in plastic wrap then transfer to a freezer ziplock bag.
