Carrots | Brown Sugar Eggs | Vanilla Extract Sugar | Oil Pecans | Coconut Rasins | Almond Flour Baking Powder | Baking Soda Cinnamon | Cloves Ginger | Nutmeg

Grate carrots and squeeze gently between paper towel and set aside. Beat egg whites until stiff peaks form and set aside.

Let's Make It!

Beat together the egg yolks and sugars before mixing in the oil and vanilla. Then mix in the carrots, nuts, coconut, and raisins.

Add all of the dry ingredients and mix until thick. Then fold in the egg whites.

Evenly divide the batter between two prepped cake pans. Then bake for 35-40 minutes.

Frost with cream cheese icing and sprinkle on more grated carrots and nuts, for decorating.

Why blot dry the grated carrots first?

Almond flour contains a lot of moisture, therefore to not weigh the cake down, blot the grated carrots in paper towels before adding, so the cake stays light and fluffy.
