Raspberry Mojitos perfectly combine citrus, sweet, sparkle, and mint flavors to make a refreshing cocktail that can be enjoyed all year. Plus this classic mojito recipe is adaptable with any combination of fruit or make it for a crowd in a pitcher.
In two highball glasses divide peach chunks, raspberries, cut limes, and mint leaves. Use a muddler to gently press and release juices.
Divide rum and simple syrup between the glasses, add ice, and then divide the soda water. Stir drinks.
Squeeze in more lime wedges, to taste, and garnish glasses with more mint and fruit.

How to Make Simple Syrup:In a small saucepan combine 1 cup sugar and 1 cup water. Stirring occasionally, bring to boil. Once the mixture comes a boil and sugar is dissolved, remove from heat. Cool before adding to drinks. Store leftovers in refrigerator in a glass jar or airtight container.How to Make Mojitos in a Pitcher:
In a large pitcher muddle together 32 mint leaves, 1 cut lime, and 4 ounces simple syrup.
Add 1 cup of rum and ice to the pitcher.
Top with 1 liter soda water and give a brief stir.
Garnish with more mint leaves and squeeze in more lime juice to taste.
