Ingredients

Shredded Zucchini Unsalted Butter Brown Sugar | Large Eggs Granulated Sugar Maple Syrup Vanilla Extract Quick Cooking Oats Gluten Free Flour Cinnamon | Baking Soda Semi-Sweet Chocolate Chips

Grate the zucchini and transfer to a paper towel or clean dish towel to gently blot and soak up excess moisture.

Let's Make It!

In a large bowl, beat together the sugars and butter. Add in the eggs and vanilla.

Mix in the dry ingredients then zucchini and chocolate chips. Scoop out the cookie dough onto baking sheets.

Bake for 13-15 minutes. Allow to cool on the baking sheet for 15 minutes before serving, then enjoy!

Can I Make These Dairy Free?

Yes! Substitute a vegan butter stick for the softened butter and reduce salt to 1/4 teaspoon. Use dairy-free chocolate chips, such as Enjoy Life, for the baking chips.
