Ingredients

Sweet Potatoes Apple Chopped Pecans Dried Cranberries Apple Cider Vinegar Pure Maple Syrup Ground Mustard Dijon Mustard Chives or Green Onions

Divide diced sweet potatoes between two baking sheets. Drizzle with olive oil and sprinkle with salt and pepper. Roast until tender and caramelized.

Combine the vinaigrette ingredients - vinegar, maple syrup, dijon mustard, and chives 

In a large bowl combine the sweet potatoes, apples, pecans, cranberries, and dressing.

Serve the salad warm, at room temperature or cold and enjoy!

How Do I Know When The Potatoes Are Done?

Roast the sweet potatoes until they have crispy, brown exteriors. This will help them to hold their shape while being mixed in with the other ingredients.
