Mexican Stuffed Peppers

Change up taco night with this easy Mexican Stuffed Peppers recipe. Bell peppers are stuffed with a cheesy mixture of beef, rice, salsa, beans, and authentic Mexican spices for an all-in-one family dinner.

Ingredients

Ground Beef 𑗅 Onion Garlic 𑗅 Broth 𑗅 Rice Salsa 𑗅 Chili Powder Cumin 𑗅 Oregano Cilantro 𑗅 Black Beans Sour Cream 𑗅 Cheese Bell Peppers 𑗅 Oil

Brown the beef, onions, and garlic together in a large pan.

Let's Make It!

Add the rice, salsa, and seasonings. Bring to a simmer, cover, and cook for 20 minutes, or until rice is tender.

Divide the mixture between the bell peppers and bake for 45 minutes.

Can also be frozen for an easy make-ahead meal!
