In a large skillet, cook the sausage, peppers, and mushrooms until the sausage is browned and the vegetables are tender.

Let's Make It!

Add the mixture to a casserole dish. Sprinkle with chopped green onions and cheese.

Whisk together the eggs, cottage cheese, half and half, salt, pepper, and a dash of hot sauce.

Pour the egg mixture over the sausage. Sprinkle with additional cheese.

Bake for 35-45 minutes at 350ºF. Let rest for 5 minutes before serving and enjoy!

Can I Make This Ahead of Time?

Yes! Since there is no flour or baking powder in this recipe, the mixture may be prepared several hours in advance and stored in the fridge until ready to bake.
