Mexican Stuffed Peppers

Ingredients

Ground Beef Onion | Oregano Garlic | Cilantro Beef Broth White Rice Salsa | Black Beans Chili Powder Cumin | Sour Cream Colby Jack Cheese

In a large skillet, cook the ground beef and onions together. Once cooked, add in the garlic and cook for another 30 seconds.

Let's Make It!

Add in the rice, broth and seasonings. Stir together, cover and bring to a simmer. Allow to simmer for about 20 minutes.

Remove the mixture from heat and stir in the beans, cilantro, sour cream, and 1/2 cup cheese.

Evenly distribute the mixture into the hollowed out bell peppers and place in a prepped baking dish. Add some broth or water in the bottom of the dish.

Cover the dish with foil. Bake for 30 minutes. Uncover and bake for 10-15 minutes more.

Can I Make These Dairy Free?

Yes! Omit sour cream from beef mixture or use a dairy free version. Top peppers with avocado crema when serving and use dairy free cheese for topping or forgo.
