Ingredients

Bell Peppers | Onion Garlic | Salsa Fire Roasted Tomatoes Chili Powder | Cumin Coriander | White Fish Canned Black Beans Corn | Limes

In a large skillet, saute the bell peppers and onions until soft. Add in the garlic and cook together.

Let's Make It!

Add in the salsa and seasonings and lower the heat to medium low. Simmer for about 5 minutes.

Mix in the beans and corn and bring back to a simmer. Add the fish, making sure the fish is covered by the sauce, and cook for about 10-15 minutes.

Squeeze some lime juice over and serve over rice with cheese, cilantro, and tortilla chips.

How Do I Know The Fish Is Cooked?

Cooking time will depend on thickness of fish. For more reliability use an instant read thermometer to make sure it’s at 145ºF in the thickness part of the filet. Also look for color inside changing from translucent to opaque.
