Ingredients Needed:

Olive Oil Pork Roast Broth Whole Berry Cranberry Sauce Dijon Mustard Seasonings Cornstarch

Season the pork with salt and pepper. Heat oil in the Instant Pot and sear on all sides.

Add the broth, cranberry sauce, dijon mustard, and seasonings. Cook under pressure for 15 minutes and let pressure release naturally.

Remove the pork roast to rest. Meanwhile add cornstarch mixed with water to the pot. Simmer to thicken.

Slice and serve with tangy gravy and mashed potatoes.

Important tips to remember!

This recipe works well with pork loin roast, not tenderloin.

You may use bone-in, pork butt, or shoulder, but cook for 15 mins / pound.
