Sausage Hash Brown Casserole is an easy make-ahead breakfast dish combining hash browns, sausage, eggs, and cheese. It's perfect for entertaining or Christmas morning!

Ingredients Needed:

Frozen Hash Browns Butter Olive Oil Breakfast Sausage Red Pepper Onion  Eggs Milk Cheese

Mix together thawed hash browns, butter, oil, salt, and pepper. Press into a baking dish and bake for 30-35 minutes.

While the hash browns are baking, brown the sausage. Drain on paper towels and in the same pan, saute the peppers and onions.

Whisk together the eggs with milk, and pour over the baked hash browns. Layer with cheese, sausage, veggies, and more cheese on top.

Bake for 20-30 minutes longer, or until the eggs are set. Let stand for 10 minutes before slicing and serving.

Can I make this breakfast casserole ahead of time?

Yes! It may be frozen baked or unbaked for a make-ahead breakfast. It may also be assembled the night before to bake in the morning!

Make Other Versions!

Mexican: Substitute chorizo for the sausage, use pepper jack cheese – Veggie: Omit the sausage and load up on the veggies, like well drained chopped spinach, peppers, mushrooms, and artichokes. – Ham and Cheese: Chop up 2-3 cups and layer with hash browns, eggs, veggies, and cheese.
