To help the chicken cook evenly, start by pounding the chicken breasts to around 1" thick

Season the chicken breasts and then spread pesto on both the chicken and polenta

Grill the chicken and polenta. Then top the chicken with marinara and mozzarella slices. Return to grill to melt.

Flip minimally. Only flip once the first side is charred and is easily removed
