Ingredients

Zucchini Egg | Baking Powder Sugar | Baking Soda Brown Sugar Coconut Oil Vanilla Extract Gluten Free Flour Cinnamon

Grate the zucchini and place in paper towel. Then gently squeeze to get the excess water out.

Let's Make It!

In a large bowl, whisk the sugars and wet ingredients together. Stir in the grated zucchini.

Add in the dry ingredients and stir until no flour pockets remain. Pour into a prepped loaf pan.

Bake until a toothpick comes out clean, then allow to cool before serving.

Why blot the zucchini before adding?

Gluten-free flour does not absorb moisture as well, so this prevents a wet, gummy loaf.
