Ingredients

Red Potatoes Hard Boiled Eggs Mayonnaise Pimentos Celery | Onions Gherkin Pickles Yellow Mustard Celery Seed

Put all the potatoes in a large pot and boil for 20-25 minutes. Drain, cool, peel and dice.

In a medium bowl, add the dressing ingredients and mix well.

Add the chopped potatoes and eggs. Gently mix together and chill. Enjoy!

Can I Make This Ahead of Time?

For best results, boil the potatoes the night before. Let them sit in a colander overnight at room temperature to cool completely. The hard boiled eggs may also be cooked and chilled the night before.
