Bring a large pot to a boil and cook your noodles until they're al dente. Then strain and rinse with cold water. This helps the pasta from becoming mushy.

Let's Make It!

In a large bowl, combine all of the main salad ingredients together. Then set aside.

In a pint sized jar, add all of the dressing ingredients. Seal the jar and shake well to mix everything.

Gently mix everything together. Refrigerate for at least 1 hour. For best texture, let it sit at room temperature for 30 minutes to soften pasta.

Can I Make This Dairy Free?

Yes! Just eliminate the fresh mozzarella, or use a dairy-free cheese alternative. When making the Italian dressing, skip the Parmesan cheese, or replace it with 2 tablespoons nutritional yeast.
