Enjoy classic lemon bars again, even better than the old fashioned one’s mom made! This gluten-free lemon bars recipe includes a foolproof trick for a lemon topping that is slightly jiggly and gooey, yet solid enough to cut into squares and serve.

Ingredients

GF Flour Granulated Sugar Unsalted Butter Cream of Tartar Eggs | Lemons Powdered Sugar

In a food processor, combine all of the dry ingredients for the crust. Then slowly add in the softened butter until fully mixed.

Let's Make It!

Press the mixture into the prepped baking pan and bake for 20 minutes, or until lightly brown.

For the custard, combine all of the filling ingredients. Cook over medium heat until the mixture thickens. Remove from heat and stir in the butter.

Pour the hot lemon filling into the baked crust, then bake in the oven again for another 10 minutes. Allow to cool before cutting and serving!

Serving and  storing tips

After the bars have completely cooled, they will need to chill for 2 hours to fully set. After serving, any leftovers should be refrigerated in an airtight container. Upon sitting, the powdered sugar will seep into the filling, so you may want to dust them again upon serving.
