Ingredients

Pie Crust (graham or almond flour) Heavy Cream Sugar | Eggs Vanilla Extract Lemons Plain Greek Yogurt Cream of Tartar

Heat the sugar and cream together on the stovetop until the sugar is dissolved. Remove the mixture from the heat and add the lemon zest, lemon juice, and greek yogurt, then whisk until smooth.

Let's Make It!

Pour the mixture into the pie crust and allow to freeze. Then make the meringue by beating the egg whites with cream of tartar until frothy and gradually add in the sugar.

Spread the meringue on top of the frozen filling. Then bake the pie at 500°F for about 3 minutes.

Are There Other Toppings I Could Do?

Instead of topping with meringue, spread on homemade whipped cream, Cool Whip, sprinkle with toasted coconut, or fresh berries.
