Egg Roll Bowl

I LOVED this! Fast and easy and a great way to get lots of veggies in! I am diabetic and cannot do carbs and was positively craving egg rolls- this was perfect!


Ingredients Needed:

Ground Pork Sausage Carrots Green Onions Garlic Ginger Coleslaw Mix Soy Sauce Sesame Oil Cilantro Rice or Cauliflower Rice

In a large skillet brown the sausage, breaking up with a spoon.

Let's Make It!

Add the carrots, green onions, garlic, and ginger. Cook and stir for 2 minutes.

Stir in the slaw mix and cook until slightly wilted.

Mix in the cilantro, soy sauce, and sesame oil.

Server over cooked rice or cauliflower rice (low carb) and sprinkle with peanuts, if desired.

What else can I add?

To add more protein and flavor, add snow peas, bamboo shoots, or scrambled eggs.
