I was absolutely blown away by the results, as was my family! I couldn’t believe such a simple combination of ingredients, made in minutes, could make such a perfect unison of flavors and texture. The crispy, crunchy layer of cheese makes an ideal contrast to the creamy seasoned quesadilla filling.

Ingredients

Pinto Beans Chili Powder Cumin Green Chiles Lime Juice Sharp Cheddar Cheese Gluten-Free Tortillas

Microwave the beans and seasonings in a bowl to soften. Add in the lime juice and green chiles and mash. Stir in the cheese.

Let's Make It!

Lay out a tortilla and spread the filling out on half of it. Then fold over the unfilled side and press to seal.

Heat and oil a skillet. Spread out some cheese and place a prepared quesadilla on top.

Once the cheese is crisp, flip the quesadilla and cook for another minute. Repeat with remaining quesadillas, and serve!
