Coconut Oil | Onion Bell Pepper | Garlic Coriander | Curry Powder Ground Ginger Medium Raw Shrimp Canned Coconut Milk Diced Tomatoes Basil | Limes Sriracha

In a large skillet, add the oil, peppers and onions and saute until tender. Add the seasonings.

Let's Make It!

Add the shrimp and cook until the shrimp is almost pink throughout, about 3 minutes.

Stir in the coconut milk, diced tomatoes, and basil. Bring to a boil, then lower Simmer for 5 minutes, stirring occasionally.

Stir in the lime juice and sriracha to taste and then serve immediately over rice and enjoy!

Can I Use This For A Meal Prep?

Yes! For meal prep, measure all your spices in a small dish, slice the peppers, onions, and mince the garlic. Prepare the shrimp by removing the shells and tails, refrigerating until ready to use. When you are ready to eat, the dish only takes 10 minutes to cook, so have your rice ready!
