Coconut Macaroons


There are many ways to make coconut macaroons, but this recipe yields, fluffy, light, and airy treats thanks to two easy tricks!

Eggs Granulated Sugar Vanilla Extract Shredded Coconut Potato Starch or Almond Flour

In a standing mixer, beat together the egg whites and salt until frothy. Then gradually add in the sugar until peaks form before  adding the vanilla extract.

Let's Make It!

Use a silicon spoon to gradually fold in the potato starch or almond flour and coconut until well incorporated.

Use a cookie scoop to scoop out even potions of the mixture and spread them out on a prepped baking sheet.

Bake for 25 minutes, until very lightly browned and set. Enjoy and repeat!

Can I make these without flour?

Yes, if you don't have potato starch or almond flour, simply omit the flour. They will not bake up as tall, but will still be amazing!
