Canned Chickpeas Avocados | Garlic Grape Tomatoes Red Onion Parsley | Dijon Mustard Crumbled Feta Lemon Juice

In a large bowl add chickpeas, avocados, cucumbers, tomatoes, red onion, feta, and parsley.

Let's Make It!

In a small jar, combine all of the dressing ingredients and shake vigorously to mix together.

Pour dressing over chickpea salad ingredients and stir gently to combine. Serve immediately and enjoy!

Can I Make This Ahead of Time?

If making ahead of time, add the avocados right before serving so they don't become discolored upon sitting. The dressing can also be made up to 3 days ahead and refrigerate in an airtight container.
