Chicken Tortilla Casserole

Ingredients

Red Pepper | White Rice Onion | Salsa Garlic | Chicken Broth Chicken Breast Taco Seasoning Black Beans | Corn Sour Cream Cilantro | Shredded Cheese Tortilla Chips

Saute the onion and peppers until tender. Then add in the chicken and cook slightly before adding the salsa, seasoning, rice and chicken broth. Cover and simmer.

Let's Make It!

Stir in beans, corn, sour cream, cilantro, and ½ cup shredded cheese. Remove from heat.

In a greased baking pan, layer half of the chicken mixture and top with crushed tortilla chips. Repeat this layering and top with the shredded cheese.

Bake for 20-25 minutes, or until cheese is melted and casserole is hot throughout. Serve with desired toppings.

Cooking liquid options

Some options for cooking liquid are water, GF broth, tomato sauce, quick gluten-free enchilada sauce, chili sauce, ketchup, salsa or combination of any of these things.
