Ingredients Needed:

Butter Onion Garlic Fresh or Frozen Broccoli Chicken or Veggie Broth Salt & Pepper Cornstarch Sharp Cheddar Half & Half Cream

Select SAUTE function on instant pot to melt butter. Add the onion and cook for 3 minutes, or until translucent. Add garlic and sauté 30 seconds more.

Prep Work

Stir in the broccoli and broth. Lock lid in place and select HIGH pressure for 2 minutes cook time. When the timer ends, quick release pressure. Whisk together cornstarch with water until smooth. Add the mixture, stirring constantly until soup comes to a boil and thickens.

Cook it

Add handfuls of cheddar at a time, stirring to melt between each addition.  Once cheese is melted, stir in half and half.

Use heavy cream for a richer, creamier broccoli cheddar soup!
