Ingredients

Enchilada Sauce Colby Jack Cheese Ground Beef | White Onion Garlic | Green Chiles Cumin | Onion Powder Chili Powder | Paprika Oregano | Refried Beans Cayenne Pepper Corn Tortillas

In a large skillet, cook the ground beef and onions over medium heat. Then drain any grease and mix in all of the spices.

Let's Make It!

Add in the refried beans and water to the ground beef mixture and mix together.

Heat some oil in a small skillet and then heat a stack of 3 corn tortillas at a time. Wrap in foil to keep warm.

Sprinkle cheese in the middle of the tortilla, top with beef / bean mixture and roll. Place  seam side down in the prepped baking dish.

Pour the remaining enchilada sauce over the top and sprinkle with cheese. Bake for 30 minutes at 350ºF and enjoy!

Alternative enchilada fillings

Veggie Enchiladas – Mix together the chiles and seasonings with 1 can drained black or pinto beans and 3 cups cooked veggies, such as cubed sweet potatoes, broccoli, onions, bell peppers, or mushrooms.
