Zucchini Olive Oil Garlic Dried Basil Italian Seasoning Salt & Pepper

Grease a baking sheet and add the zucchini. Drizzle with additional olive oil and garlic.

Spread the zucchini apart so there is room for the heat to circulate. Roast until crisp tender, flipping halfway through.

After it has roasted, sprinkle with seasoning. Adding the salt at the end means excess moisture won't be drawn out and keeps the veggies crisp!

What is the best zucchini to use?

The smaller the better! Larger zucchini contains more moisture so they will become soggy. Use small, tender zucchini for best results.
