Baked Tomatoes are cheesy, broiled tomato slices with bubbly, golden parmesan or mozzarella cheese and sprinkled with fresh basil. Baked tomatoes with cheese make an all star appetizer or an easy side dish in minutes!
Grease a 13X9 baking pan or rimmed baking sheet. Adjust oven rack to top position and preheat broiler to high. (See recipe notes for baked tomatoes directions.)
Lay sliced tomatoes on prepared pan. Drizzle with olive oil and season with salt and pepper.
Place tomatoes under broiler for 8-10 minutes, rotating pan halfway though. The tomato edges will start to char and blister.
Remove from oven and sprinkle on cheese. Return to oven about 1-2 minutes more, or until cheese is bubbly. Sprinkle with fresh herbs and serve immediately.

Oven Baked Tomatoes
To make oven baked tomatoes prepare them the same way, but add the cheese on first, with the oil, salt, and pepper. Place them on a middle rack in a 400ºF oven for 10-12 minutes.If you like the cheese to be a little golden, turn on the broiler for the last minute.
Modifications / Additions
Cheese - Parmesan and Mozzarella are the most common toppings, but slices of sharp cheddar, swiss, or gruyere also adds magic!
Mayo - Spread a thin layer of mayo instead of olive oil. Top with cheese and bread crumbs.
Bread crumbs or panko - Use 1/2 cup regular or gluten free bread crumbs to sprinkle on with the mozzarella or parmesan cheese.
Garlic - Use freshly minced, garlic powder, or garlic salt
Italian seasoning or other dried herbs, such as basil, oregano, or thyme
No cheese - Broiled or Baked Tomatoes are also perfect without cheese. Drizzle with olive oil and season with salt and pepper for a simple side.
