Mexican Fish

One Pot Meal!

Cooked this last night…. WONDERFUL and simple to make! We all enjoyed it and agreed that it could easily be made with chicken, tofu, or as suggested other white fish. It was flavorful.

Ingredients Needed:

Bell Pepper Onion Garlic Salsa Fire Roasted Tomatoes Chili Powder Cumin Ground Coriander Black Beans White Fish

In a large skillet saute the pepper, onion, and garlic.

Let's Make It!

Add the salsa, tomatoes, and seasonings. Simmer for 5 minutes, or until thickened slightly. Add beans and corn.

Add the fish, pushing down so it is mostly covered in the liquid. Cover and simmer for about 10-15 minutes.

Squeeze lime on top and serve with tortilla chips, cheese, and sour cream.
